To be a Griffon, Gryphon, of Gryphin you need ears. The medieval creature was described with ears and that is how you can tell if a headshot is an eagle or a griffon, ear tufts.
But it is fantasy, and you can do what you want, just pointing out the conventual thought. | |

Some varieties of griffins are known to have ear tufts protruding from the tops of their heads, as "Grifon" points out however, because all griffins have the heads of eagles, and eagles usually don't have stick up ears like lions, that may well be the head of a griffin, ears or no ears! | |
