SciFi and Fantasy Art: Black/White

Being the odd and curious person I am, I often wonder why we don't print the background of a page in a book(black) with white(uninked) letters; or draw in white pen on black paper. I usually come to the obvious conclusions(about efficiency, not aesthetics), but it occurred to me that we don't have any of the same limitations when our ink is ones and zeros.

The gryphon depicted is a nameless woodpecker-colored burd who has been bothering me recently. These are, of course, not her real colors. Computer painted, of course.
