Hey Chelsea! Here are the ones I think would make the best (or most interesting ) protectors: 1. Dragon(O.K., I am a bit biased !)
2.Elf-could even be percieved as human by hiding their ears
3. Griffin
4. Werecat- easily developed as a lovable character
5. Werebunny- this one could be so funny, comic relief in a more serious story
6. Treefolk- just interesting to me
7. Fairy- they have sort of universal appeal
8.Nymph- a water creature might be of special use as a protector. Anyway, from the brief outline of your story, it sounds like these creatures would sort of cover all the bases - the Dragon and Griffin to protect her by land or air, the Werecat and werebunny use their special abilities-like night vision and extremely acute hearing, treefolf who can communicate with all the plants, Fairy could be really useful as a spy or lookout because of their size. Of course, just the humble opinion of one old dragon! Story plot sounds interesting already.

A group of elementals would be cool. Maybe throw in a mage or a treefolk. It’s called Gothic Protection, so perhaps nature aspects would suit the story more. Hope I’ve helped.
