My mom bought a little kit from the store a few days ago, but I was afraid to make it cause I was on the diet. ~~ But I looked at the calorie count, it said you can have 2 pieces for only 140 calories! So I decided to make it; I mean what the heck  . And ya know, it was incredibly easy to make too!  John R Farley Jr replies: "One of the things you can do for homemade stuff is cut down on the sugar. I don’t know why fudge has to be so sweet it hurts your teeth-- an in physical pain or sensitivity.
WHich of course means, you can have a larger piece of fudge.
When I cook, I leave out the salt, and reduce the amount of butter or oil they ask for.
I think fudge is easy. You should come to Mackinac Island in Northern Michigan and get some genuine fudge made on the island on these big marble slabs. Great flavors too. " | |

(and you know how I love sweets!  ) I think that maybe they should have used unsweetened chocolate, cause that’s what a lot of other recipes use. I mean I’ve made homemade chocolate cakes, cookies, etc and that’s what they call for. And if the fudge wanted to use the already sweet chocolate, they should have used less of the actual sugar... yummy John R Farley Jr replies: "You should try that and experiment. See how little sugar you can get away with. Personally I like dark chocolate because it’s not that sweet, but still tastes great with milk.

John R Farley Jr replies: "I like milk chocolate too, especially if it’s the good kind, not the cheap junk that comes around during the holidays and tastes like chocolate flavored wax.

| 20 Nov 2009 | Aimee, logged out and silly | Loading...But I did enjoy seeing what they considered to be fudge ingridients, because to be honest I didn’t know. I really haven’t eaten that much fudge in my whole life. I think the last time I had some fudge was years ago. And I never made it homemade either. You know I have had ice cream on a monthly or even weekly basis!  And I’ve had quite a bit of cakes, cookies, pies. But fudge I’ve never been that familar with. So it was interesting to make it and see how it’s made.  ^^ John R Farley Jr replies: "I made fudge once, a long time ago. And I remember it being too sweet even for me. I’ve seen made on the big marble slabs where they’re moving it around, turning it and folding it, then spreading it around again while it cools.
I’m not much into pies, I like a slice of chocolate cake once in awhile, but I prefer ice cream. But then again, I’m not much of a dessert person. I prefer to eat more food, and I never have "room" for anything more. I’d rather have a big steak and a baked potato with butter and sour cream than a little chocolate truffle. " | |
